Wudi Dashan roast chicken originated from Jieshishan Town (formerly Dashan Town), Wudi County, Shandong Province. According to folklore, Dashan roast chicken has a history of more than 311 years. According to legend, the Emperor Shenzong of the Ming Dynasty liked to eat chicken very much, and the skills of the Imperial Chef 1 in the palace were constantly being renovated. In order to please him, the minister in charge of the service set up a challenge, and called the folk experts to hold an Imperial Chef Competition. After seven days of competition, Xing Youcai of Dashan Street stood out with his delicious roast chicken, tender meat and bright color, and won the first place in the competition. He was recruited into the palace and named the Imperial Chef, who served the emperor specially. Only at the end of the year, when the vassal countries came to pay tribute and hosted a banquet for the tribute envoys, did the ministers have a chance to have a good meal. Then, when the confidant minister celebrated his birthday, in order to win people's hearts, he was given a few roast chickens to show his gratitude. Later, in 1617 (thirty-five years of Wanli reign in the Ming Dynasty), Xing Imperial Chef retired from his old age and passed on his craft to his youngest son, who passed it down from generation to generation. In the early years of the Republic of China, Xing Baoliang, the fifth-generation inheritor of Dashan roast chicken, pushed a unicycle and peddled it around the streets. He only made 11 pieces every day, and when he sold them out, he went home to have a rest. He never made more than one, and many people gave him the nickname "Xing Laoshi". Because Dashan roast chicken was delicious and business was good, many villagers came to learn, and Xing Laoshi's thoughts were very open. He taught the villagers in Zhuangxiang who came to learn his skills by hand. First, it is soaked and cooked in old soup containing Chinese herbal medicines such as cinnamon, and then smoked with white sugar. Dashan roast chicken was introduced into Dashan Street in Wanli period of Ming Dynasty, and it was inherited and developed by Xing family. Among them, the "small iron house" roast chicken in Dashan was the leader of the roast chicken industry. Li Fengge, a villager in Dashan, is famous for its delicious and cheap roast chicken. In order to carry forward the technology of Dashan roast chicken, he led his three sons to process and sell Dashan roast chicken, and took the homemade small iron house as the selling point. "Small iron house" became synonymous with Dashan roast chicken.
