In October, 1991, Yangzhou Cuisine Association appraised 45 famous dishes in Yangzhou by famous chefs and experts.

The first batch of names are as follows:

1. Five famous cold dishes: baked tiger's tail, drunken crab in Zhongbao, chicken, double yellow salted duck eggs, and.

2. Ten famous dishes: stewed shark's fin, Yangzhou lion's head, dried shredded pork, three sets of ducks, braised silver carp head, wild duck in scallion casserole, sliced pheasant with bean sprouts, roasted whole pig's head, vinegar-baked mandarin fish and egg-beautiful chicken.

3. Ten famous points: three-dimensional steamed stuffed bun, thousand-layer oil cake, double sesame seed cake, emerald steamed dumplings, steamed stuffed bun with dried vegetables, wild duck cabbage bag, glutinous rice steamed dumplings, steamed dumplings with crab roe, steamed dumplings with insect claws, and shredded chicken paper.

4. Five famous vegetarian dishes: vegetarian crab powder, Dong Dong Qing, fried vegetarian eel, daming temple Luohanzhai and Wensi bean curd soup.

5. Five famous beets: osmanthus and ginkgo, honey fire recipe, imperial orchard, honey lotus root, and cherry frog.

6. Top Ten Snacks: Roasted with Scallion Oil, Huangqiao Sesame Cake, Yangzhou Cake, Sauté ed Fish Noodle, Yangzhou Fried Rice, Bamboo Shoot Fried Dumpling, Tri-color Oil Dumpling, Shrimp Dumpling Noodle, Ginger Crispy Cake and Yangzhou Spring Roll.

In p>2112, Yangzhou Cuisine Association assessed 69 famous dishes in Huai Yang by masters, famous teachers and experts.

New Century Hotel: Braised plain abalone with Pearl and wonderful shrimp rolls.

jinghua hotel: abalone with raw juice, hedgehog fish, Christmas lobster boat, and three shredded noodles with soup.

Garden International Hotel: Garden Pigeon, Jiang Yao Luo Bu Ju, Garden Yipin Pot, Garden Yipin Meat, Guizhan Fish and Rice.

Shita Hotel: Yuanyang chicken wings and prawns with chrysanthemum.

Yuemingxuan Hotel: Yueming tofu, flame mandarin fish, stewed mutton with fish and steamed yellow croaker.

crystal palace: double-flavored fish, crystal steak, crystal palace roasted goose.

Yiman Restaurant: Shang Suyan and Jade Pearl Tofu on the south leg.

international trade hotel: abalone with jade beads and crab powder and hibiscus fillets.
