The quality of the wok has nothing to do with the shape of the part of the bottom that touches the fire. You can choose a flat-bottomed or sharp-bottomed wok according to your own preferences or needs.
First, buying skills
1, the pan surface should be smooth, but not "smooth as a mirror". Because of the casting process, all iron pots have irregular shallow lines, which is not a problem. But be sure to pay attention to whether the smooth surface is a coating, which is the key.
2. Check for defects. There are two kinds of defects: small bumps and pits. The raised part of the small bump is generally iron, which has little effect on the quality of the pot. If the bulge is on the concave surface of the pot, it can be removed with a grinding wheel to avoid blocking the spatula.
3, the bottom of the pot is commonly known as the bottom of the pot. Generally, common pots have flat bottom, pointed end and arc bottom, and what pot bottom can be selected according to your own preferences.
4. Pots can be divided into thickness, and the thickness is generally 2-2.5 mm. This thickness is different, and the insulation effect is better. In addition, the corresponding service life is longer. When you buy it, you can turn the bottom of the pot upside down, put your finger against the concave center of the pot and hit it with a hard object. The louder the pot rings, the greater the vibration, the better. This method can also be used to check whether there are cracks in the pot. Cracks are generally easy to appear at the edge of the pot, because otherwise it is the thinnest.
5. If there are rust spots on the pot, it is not necessarily of poor quality. Pots with rust spots indicate a long storage time. The longer the pot is stored, the better, because the internal structure of the pot can be more stable and it is not easy to crack when it is used for the first time. Rust is also easy to clean. Boil the pot for a while, then add the fat pork. When the fat is boiled into oil, add leeks. Throw away the lard and leek when it is fragrant, and the pot can be used.
Second, matters needing attention
The newly bought raw wok can't be used for cooking immediately.
1. Rust removal: To remove the rust smell, there are the following methods: burn the newborn iron pot for a while, then add the fat pork, add the leek when the fat pork is boiled into oil, stir-fry until the smell is overflowing, then discard the lard and leek, and the pot can be used.
2, in addition to odor: the newly bought iron pot has an odor, you must first put it on the fire and burn it on all sides. Then turn off the fire and add cold water. Be careful not to burn your hands. After scrubbing, light a fire again, add a little oil (salad oil) and fry some vegetable scraps for a quarter of an hour. Be careful to fry it everywhere. After that, just pour out the vegetable scraps and wash them.
3. Rust prevention: It would be better if the iron pot bought back has no rust and no odor. Just buy a piece of pigskin. It is handled in the following way. First of all, light a fire, put the newly bought iron pot on the fire and burn it thoroughly, rub the pigskin back and forth on the heated iron pot, and rub all the inside of the pot until the skin is thin and smoke. That's good. (Remember to turn on the range hood)
4. Maintenance of iron pot: After all, iron pot is an iron pot, and its surface should be maintained like skin. After the first treatment, brush the pot clean after each use, put it on the fire to dry and put it away. Otherwise, it will rust if there is water residue.
Wash a new pot with vinegar
When cooking with a newly bought iron pan, you often find black spots in the dish. In fact, before using a new pot, wash it with vinegar, and you can fry a dish with excellent taste and complete flavor.
