Pork bone, onion, ginger and garlic
Spices: pepper, star anise, dried pepper, cinnamon, geranium, nutmeg and angelica dahurica.
Practice steps
1. Wash pig bones, put them in a pot with cold water, add onions, ginger slices and cooking wine, boil them, skim off the floating foam, and take out the bones for later use;
2, stir-fry sugar color: put oil in the pot, add sugar and simmer until reddish brown, add bones and stir evenly until the color is the highest;
3. Stir-fry onion, ginger and garlic, stir-fry Chili noodles and spices (pepper, star anise, cinnamon, fragrant leaves, dried Chili, nutmeg and angelica dahurica);
4. Add oyster sauce, soy sauce, cooking wine and soy sauce, stir evenly, season and color;
5. Pour all the ingredients into the saucepan, add a spoonful of soy sauce and add hot water without ingredients;
6. Bring the fire to a boil, turn to a small fire cover for about an hour, and turn to a large fire cover to collect juice until it is sticky.
