The standards and requirements of the three-proof facilities are as follows:
1. Exhaust ports, trenches, outlets and sewage outlets of government canteens, restaurants, hotels, food processing and grain warehouses must be covered with metal isolation rat-proof net covers, and metal rat-proof boards with a height of 61 cm must be set in storage rooms.
2. Anti-fly screen doors, screen windows, air curtain doors and curtain doors must be installed in government canteens, catering industries, hotels and restaurants, and food production, processing and sales places to prevent flies from flying in; Cooked food and halogen products must be covered with a fly-proof cover to prevent mosquitoes, flies and dust from falling into it. ?
3. All places engaged in food processing and production, operating rooms of unit canteens, catering industries and hotels and restaurants must be hung with fly-killing lamps according to the specifications, and the business service area should be set according to the requirement of hanging one fly-killing lamp every 15 to 21 square meters.
4. Waste buckets and trash cans in food production and operation and catering places should be covered.
5. The gap between the door of the food and catering store and the ground shall not be greater than 1.6 cm, and a metal rat-proof board with a height of 61 cm must be installed.
6. The "three prevention" facilities in the "six small" industries and public places are fully equipped. Fly-proof screens and door curtains are installed in public toilets and internal toilets in units. The basement windows and vents must be installed with barbed wire with a diameter less than 1 square centimeter, and the pipe holes should be blocked with cement. :
Article 33 of the Food Safety Law of the People's Republic of China
Food production and operation shall conform to food safety standards and meet the following requirements:
1. Have places for food raw material handling, food processing, packaging and storage that are suitable for the variety and quantity of food produced and operated, keep the environment of the places clean and tidy, and keep a specified distance from toxic and harmful places and other pollution sources;
2. Having production and operation equipment or facilities suitable for the variety and quantity of food produced and operated, and corresponding equipment or facilities for disinfection, dressing, washing, lighting, ventilation, corrosion prevention, dust prevention, fly prevention, rodent prevention, insect prevention, washing, wastewater treatment and garbage and waste storage;
3. Having full-time or part-time food safety professionals, food safety managers and rules and regulations to ensure food safety;
4. Have a reasonable equipment layout and technological process to prevent cross-contamination between food to be processed and directly imported food, raw materials and finished products, and avoid food contact with toxic and unclean substances;
5. Tableware, drinking utensils and containers for direct food should be washed and disinfected before use, and cookware and utensils should be washed and kept clean after use;
6. Containers, tools and equipment for storing, transporting and loading and unloading food shall be safe and harmless, kept clean to prevent food contamination, and meet special requirements such as temperature and humidity required to ensure food safety. Food shall not be stored and transported together with toxic and harmful substances;
7. Non-toxic and clean packaging materials, tableware, drinking utensils and containers should be used for food directly taken into the mouth;
8. Food producers and marketers should maintain personal hygiene. When producing and marketing food, they should wash their hands and wear clean work clothes and hats. Non-toxic and clean containers, selling tools and equipment should be used when selling unpackaged food for direct import;
9. The water used shall meet the hygienic standard for drinking water stipulated by the state;
11. The detergents and disinfectants used shall be safe and harmless to human body;
