In order to show the charm of China's food culture, the organizers of the Shanghai World Expo specially set up the "Eight Great Cuisine" area in the Expo Park. The eight gourmet areas are located next to the China Pavilion, the landmark building of the World Expo. Eight cuisines are chosen because they are the core representatives of China's food culture. According to records, the eight major cuisines were formed in different periods. The earliest Cantonese cuisine can be traced back to the Han Dynasty and can be found in the book Huai Nan Zi. In the Qing Dynasty, according to historical influence and national representativeness, eight recognized cuisines of "Guangdong, Shandong, Fujian, Sichuan, Zhejiang, Jiangsu, Anhui and Hunan" were formed.
The "eight major cuisines" appear in the form of eight restaurants, located in the super-large food plaza between the Expo Center and the theme pavilion on the west side of the Expo Axis, with an area of 1.5 million square meters. It is understood that the restaurants representing the "eight major cuisines" in the Expo site were recommended by the leading group of Expo work in relevant provinces and determined by the Shanghai World Expo Bureau after inspection and evaluation. The Commercial Management Service Department of Shanghai World Expo Bureau said that the selection criteria are not only the pure taste and high service level of the cuisine, but also whether it has contributed to and influenced the catering culture of the cuisine represented.
The catering enterprises selected as the representatives of the "Eight Major Cuisine" are: Cantonese cuisine-Chao Fu Restaurant, Fujian cuisine-Nanxinya Hotel, Shandong cuisine-Qilu Wan Yi, Sichuan cuisine-Baguo Buyi, Zhejiang cuisine-Zhiweiguan, Su cuisine-Deyuelou and Hunan cuisine-Hunan Huatian.
In addition to the "eight major cuisines", the super-large food plaza also has four parts: Chinese style, famous shops on the sea, alley style and world food forest. Recommended by the preparatory organizations of the World Expo in various provinces, cities, Hong Kong, Macao and Taiwan, and evaluated by the Liaison Group of the Shanghai World Expo Organizing Committee and the Shanghai World Expo Bureau, the Expo site has selected 33 domestic exhibitors to settle in the "Chinese Food Street", including Beijing Quanjude, Tianjin Goubuli, Inner Mongolia Little Sheep and other famous brands.
Minister Lin Shengyong specially reminded tourists that for safety reasons, tourists can't bring their own drinks into the park, but there will be many free direct drinking water supply points in the park. There is no restriction on bringing your own food, but tourists can enjoy special food as part of their sightseeing.
The same Chinese food has a completely different color, flavor and shape, because each cuisine inherits the life, habits and cultural customs of people who grew up in that land. China International Import Expo(CIIE), one of the eight major cuisines, may be a good opportunity to change China cuisine in the eyes of foreigners, abandon the general impression, give China cuisine a brand-new interpretation, and make China cuisine blossom into eight wonderful flowers. On February 23rd, the opening ceremony of Anhui Cuisine Hall was held in a low-key manner. In fact, since April last year, Anhui Province has recommended 58 catering enterprises to participate in the World Expo. After three rounds of screening by the liaison group of the Shanghai World Expo Organizing Committee, only "Jubilance" and "Tongqing Building" are left to represent Huizhou cuisine. Among them, "Jubilance" led its century-old brand "Jinlongxing" to settle in "China Food Street". The important task of showing Anhui cuisine to the whole world was handed over to the old Wuhu brand-"Tongqing Building".
Tongqinglou Restaurant was established in 1925, featuring Anhui cuisine and Huaiyang cuisine. Before liberation, it was a famous restaurant in the Yangtze River valley and even the whole country. Chiang Kai-shek, then chairman of the National Government, once dined in this restaurant. After liberation, Tongqinglou's business is still booming, and it has received many national leaders such as Mao Zedong and Chen Yi, leaving many anecdotes. According to historical records, Tongqinglou is the inventor of China steamed buns, and its food is far and near civilized. It is also the most famous catering enterprise in Anhui history so far.
