Why is Chinese food not doing well? (I)
This is a fairly common phenomenon, which is true all over the world, even in mainland China, the birthplace of Chinese food. This is also a rather interesting phenomenon, Chinese food is globally recognized as delicious, but so far, the world has not yet appeared a considerable scale of Chinese food group, Chinese food industry is still in the early stages of the group of competitors, in the foreseeable future, looking forward to the emergence of KFC McDonald's and other food and beverage giants, it is almost impossible. As a caterer, in fact, I have been thinking about this issue, the articles in this regard read a lot, but I always feel that those articles speak although very reasonable, however, some places, always feel that not thorough enough, or not comprehensive enough. Therefore, the following I will be my circle of experience and thinking, put forward a few points of my personal views. First: the lack of reverence for food Chinese people are fearless, dare to do anything. To put it nicely, this is daring, but if you're not careful, it will become reckless and wanton. Foreigners, especially those in advanced countries, although their people are much richer than ours, are seldom seen wasting food on a large scale; they treasure every food on their table and regard frugality as a virtue. In obvious contrast, when Chinese people (especially mainlanders, especially those who eat and drink at public expense) eat, the phenomenon of wastage is particularly serious. From the official to the private sector, they all take pride in eating and drinking and squandering and wastefulness, while being diligent and thrifty and wasting money in Kaiyuan is shameful. The more leftovers at the banquet, the more face the host seems to have, and the more it appears that the host has status and is not poor. These stupid habits, in our country just out of poverty, per capita income ranked in the world one hundred outside the third world countries, seems to be so harsh. China, known as the country of food, claims that nothing organic in the world is inedible, nothing that flies in the sky, crawls on the ground, swims in the water, burrows in the earth, snakes, insects, rats and ants, nothing is inedible. For any can eat, simply no taboos, an animal, from head to tail, from inside to outside, from the excretory organs to the reproductive organs, basically anything can be on the Chinese table, make those foreign adults dumbfounded. Chinese eating habits, in the good sense, can save resources, make full use of each can, in the bad sense, in the eyes of the foreign adults, are some uncivilized, strange, difficult to understand the eating habits. ****** However, first of all, it must be pointed out that eating or not eating these things (such as pig's offal and so on) does not show who is more civilized and noble, the biggest problem is that some Chinese "elites", out of unsubstantiated claims, are happy to eat some of the animal's reproductive organs or brains and so on, as well as those rare wild animals, and In the process of eating, many cruel, backward, horrible and barbaric practices have been shown. It is like knocking a hole in the top of a monkey's head and eating it alive by pulling out the monkey's brain with a spoon; or pouring boiling oil on a donkey, directly scalding it and then cutting it off piece by piece with a knife and eating it (live called donkey); putting a newly-born rat pup alive into the oil and deep-frying it to eat it (three squeakers); and placing a live goose on a hot iron plate and letting it keep jumping due to the scalding until it roasted the palm of the goose, and then chopping it off and eating it on the spot. Although this group of people only accounts for a small portion of the 1.3 billion mainland Chinese and 50 million overseas Chinese, because most ordinary Chinese can not afford to eat these nooks and crannies even if they want to eat, but the problem is that this group of people is precisely the "elite class" of our Chinese, they are the most energetic, have the power and the money, the most gluttonous, and the most influential. They are the most powerful, powerful and rich, with the biggest mouths and the most influence. The mouths of these people scare all the "creatures" in the world. This kind of bad behavior has greatly tarnished the reputation of Chinese people, and naturally, it has also indirectly damaged the reputation of Chinese food, because Chinese food is their "accomplice". ****** However, there is a point that must be made that the inability of foreign adults to fully accept Chinese food has cultural reasons that have nothing to do with whether or not Chinese people spoil their food. For example, eating dog meat, this matter a few years ago (especially during the World Cup in Korea and Japan and the Beijing Olympics) made a big fuss, in the eyes of foreign adults, dog is a friend of mankind, is not able to go into the stomach, however, the Chinese (including the North Koreans) do not have such an idea, and eat as usual. I think that other cases aside, in this case alone, we do not have to be presumptuous. Eat dog meat (although I personally do not eat), in fact, I think nothing, the dog as a livestock, some people would like to take it as a pet, or take it as a friend, or even as a son or daughter to raise, as a parent to raise, OK Therefore, for eat or not to eat the dog, can eat dog meat and so on, I personally think that this is just a clash of cultures and dietary habits, and does not involve some of the essence of the thing, the dog and the pig, the sheep, the cow, the same, but only a human breeding of the same. Dogs and pigs, sheep, cows, the same, is only a kind of livestock raised by human beings, eat eat, no big deal. It is no big deal to eat it. If the adults want to bark, let them bark and don't pay any attention to them. However, one thing we must be clear, foreign adults against us eating dogs, and foreign adults against us eating tigers, eating pangolin, eating monkeys and other rare animals, as well as in what way to eat them, this is another two different concepts, the former we may still have a little bit of a clash of civilizations excuse, but the latter, it is completely inexplicable. We eat what is precious and what is rare. What is the freshest and most flavorful way to eat a food, regardless of whether or not the method is cruel or stupid. In the end, it all boils down to the fact that we Chinese (especially mainland Chinese) lack a sense of reverence for food, or rather, for nature. The reason why man, as an animal, is able to evolve and become the spirit of all things lies in his ability to detach himself from his animal instincts, respect nature, and fear nature. It is important to realize that all of our food is a gift from nature, and whenever we are confronted with an abundance and variety of food, we should rejoice in it because it is nature's gift to us. The products of nature are not for us to take what we want, but we should be selective in what we ask for, what we can eat and what we can't, and in the modern era of such abundance of goods, there must be some moral bottom line. Therefore, we should condemn the uncivilized and ignorant dietary behavior of some Chinese, and for those involved, I think they should repent and ask God (nature) for forgiveness and pardon. Two: Lack of faith in human nature To be honest, Chinese food is famous outside, which is globally recognized, no matter from the "color, aroma, taste, nutrition" in any aspect, Chinese food is the full range of leading other countries, however, Chinese food so far is only in the Chinese cultural circle and the Western niche popular, never on the mainstream of the West. In my opinion, in the final analysis, westerners actually do not dislike Chinese food, on the contrary, they like Chinese food very much, but the problem is that they actually do not trust the Chinese who cook Chinese food from the bottom of their hearts, and the Chinese are dishonest in their eyes, and they are people with no rules and no beliefs. There is a very hot comedy movie in the United States, "The Big Bang Theory", in which some episodes illustrate this phenomenon very vividly. One of the four male protagonists very much like to eat Western food, often to a Chinese restaurant to eat, or from this restaurant to order takeaway to eat. However, every time they eat, Xie Er (Sheldon) has to ask again and again whether his favorite dish is put inside the liuding or orange ding, because the name on the menu is liuding, and he always suspects that the Chinese bosses are playing a trick to deceive the customers by replacing liuding with orange ding, but with his identity as a foreigner, he is obviously unable to tell whether these things are liuding or orange ding after cooking. Are these episodes an unwarranted slur on Chinese food? When I saw these scenes, I laughed heartily, but in retrospect, I am embarrassed and ashamed. I have to admit, as a caterer, as a person who knows a little bit about the inside story, this phenomenon is definitely not a slander or rumor, but one of the many ugly phenomena that do exist in the Chinese food industry, substituting the best with the best and the genuine with the fake, which are not individual cases, but definitely very common phenomena. These phenomena are not isolated cases, but are absolutely very common. From roadside barbecue stalls selling pork skewers as mutton to restaurants of a higher scale selling pork chops as deer chops, and in particular, and finally, some individual star-rated restaurants, sometimes fake shark's fins and bird's nests are bought as real ones. There are countless such things that cannot be covered up. Honestly, every time I hear of such cases, emotionally speaking, not to mention the first two cases, for the latter, I am not too that, anyway, for people who can afford to spend money on these things, these things in the end are real or not, they may not care too much about it, they care about the environment of the meal and who they eat with, of course, even if they eat the wrong things, they do not care, anyway, these shark's fins and bird's nests are even more expensive, and it does not cost They spend their own money. However, in terms of conscience and professional ethics, I am ashamed of those counterparts who make false claims. Purely from the technical point of view, with the Chinese people's "ingenuity", in these crooked ways (especially food), we (Chinese in general) can almost be said to have reached the highest level of achievement, shocking the four seas, and now we can almost make the fake ones exactly the same as the real ones, for example, fake salted eggs, fake milk powder, fake bird's nests, no matter whether it is in terms of texture, flavor and shape, even if they are often eaten, the fake ones are not the same as the real ones, and they are not the only ones. and shape, even people who often eat them can't tell them apart. It is said that there are people in Guangdong who specialize in making fake shark's fins, and the way they do it is just like making vermicelli, after adding some "patented" chemical additives, the fake shark's fins they make are exactly the same as the real ones in terms of shape, texture and taste (but frankly speaking, the shark's fins themselves don't have any special taste, and they all rely on other auxiliary materials to enhance their taste). No wonder there was once a friend, rare first time someone invited him to eat cassoulet shark's fin, hundreds of dollars a that, very rare, after eating, the next day he talked to me about eating shark's fin feelings: like eating a bowl of hard fans, the number of very few sticks, but inside the cassoulet juice flavor is good, very rich, long aftertaste, to the next day, the stomach inside seems to have the taste of cassoulet juice.
