How to choose tools
Now people's lives are getting better and better, and the types of food are getting richer and richer. For food safety and convenience, the kitchen must be equipped with slicing knives, bone-breaking knives, kitchen knives and fruit knives. In addition, there are many brands of knives on the market at present, so try to buy brand knives. These knives are not only excellent in quality, but also very humanized in design, which can help us break down food better.

Anyone who has used a knife knows that the sharper the blade, the easier it is to decompose food. Therefore, when selecting tools, check whether the blade is sharp, straight and seamless. At present, there are many kinds of cutting tools on the market. According to the material, it can be divided into steel, stainless steel, carbon steel, ceramics and so on. Actually, the higher the hardness, the higher the sharpness. Because the "speed" of a kitchen knife also depends on the degree and softness of the cutting edge.

Many people tend to pay attention to whether the blade is sharp when buying, but ignore more important aspects. That's the handle. The handle is in direct contact with our hands, and its quality is directly related to the comfort of use. As far as the handle is concerned, the main materials are wood, engineering plastics and steel handles. , each has its own advantages. Generally speaking, the handle of stamping kitchen knife is better and more exquisite; Traditional forging tools mostly use wooden handles (mostly round handles), and now some traditional tool manufacturers have begun to sell kitchen knives with other handles.

Sharp blade is important, but the safety of tools is more important. Many people have been injured by tools, which is really shocking. Therefore, when purchasing knives, check whether the knives have anti-slip design, so as not to hurt the users when taking off the knives.
Matters needing attention in purchasing kitchen knives
According to the different processing technology, we can divide tools into stamping and forging. So which of these two tools is better? In fact, these two tools have their own advantages:
1. Advantages of the stamping tool: Simply put, a whole large steel plate (for example, 2 mm thick) is directly stamped into a complete knife blank by the stamping tool, and then the finished kitchen knife is made through subsequent processes such as trimming, surface treatment, heat treatment and mounting. The advantages of this process are high efficiency, higher cost, higher mechanization, better surface treatment, higher standardization and more perfect details.
2. Advantages of traditional forging tools: The biggest difference from stamping process lies in the blank forming stage. Forging is to burn a billet (usually a piece) to a red-hot state, then repeatedly knock (now using a mechanical hammer) to form a preliminary cutter blank, and then carry out manual trimming (knocking), surface treatment, heat treatment and so on. The finished kitchen knife generally has a thick back, a thin entrance and a wedge-shaped cross section. Compared with stamping kitchen knives, forged kitchen knives have denser steel, more uniform stress distribution and better sharpness retention. The disadvantage is that the output is difficult to increase and the cost is high, and the process details are poor.
