How to make mutton stew quickly?
1. Apply a layer of mustard on the outside of the lamb, then put it in the refrigerator. The next day, wash off the mustard and put it into a pot to stew. This not only shortens the stewing time, but also makes the mutton tender and delicious.
2. Place a soft cloth on the chopping board, place the mutton cut into strips on the cloth, carefully pat the mutton with the back of a knife to destroy its fibrous tissue, and then cut into pieces and stew. Easily cooked and tastes better.
3. Use hot water, do not add cold water. Hot water can quickly coagulate the protein on the surface of the mutton, prevent the amino acids in the mutton from leaching out, keep the meat delicious, and speed up the cooking of the mutton. After boiling over high heat, uncover the pot and simmer for 20 minutes to remove the odor, then cover and switch to low heat to keep the oil floating on the soup surface warm and act as a stew.
4. When stewing mutton, add a pinch of tea leaves (wrapped in a gauze bag) and cook together. The mutton will become crispy and cooked quickly, and it can also remove the fishy smell of the mutton.
