How to make homemade sweet wine (mash)?
Wash glutinous rice 1000g, soak in cold water overnight, drain, spread gauze, and steam in a steamer.
Appropriate amount of cold boiled water and steamed glutinous rice are thoroughly cooled (put them in the refrigerator for several hours on hot days until your hands feel cold)
I bought a liqueur song on the market from an old farmer (sold by a liqueur vendor), which is quite delicious.
Put the liqueur koji into a thick fresh-keeping bag and grind it into powder with a rolling pin.
Take out cold boiled water and glutinous rice, and mix a small amount of cold boiled water into the glutinous rice, so that the glutinous rice will be scattered into particles without rice balls. Then mix the koji powder into the glutinous rice, and be sure to stir it evenly.
Smooth the surface of glutinous rice mixed with sake koji with a spoon.
This is what it looks like. Then seal the plastic wrap and cover it tightly. Add a hot water bottle to the bed (don't touch the washbasin). Cover the bed as thick as possible, and take out the hot water bottle the next day when it is out of temperature. There is no need for heating in the later stage, and the normal fermentation time is only 48~72 hours.
This is fermented liqueur. How to judge whether fermentation is good or not? If the periphery of glutinous rice is separated from the basin, it will rotate and float on the water when it is shaken, and it will be successful.

1: The whole production process should be clean and hygienic, otherwise it will produce miscellaneous bacteria.
2. Cold boiled water and glutinous rice must be thoroughly cooled, especially in hot weather. In fact, it is still very high when you feel cold with your hands.
The special feature of my making method is that water and rice must be completely cooled, so the sweet wine is very sweet. If it is not completely cooled, the liqueur will turn sour and not delicious.
4. When fermenting, it is not advisable to add two thermos bottles at the same time, so the temperature is very high in a short time and the fermentation is finished in less than two days, so this sweet wine tastes bitter. So if you want to eat delicious food, you must be patient. If there is no smell of wine and no water in the liqueur after two days, it proves that the temperature of the bed is not guaranteed. You should put a hot water bottle in the bed again, and you can eat delicious liqueur after three days.
5: You don't need to add a hot water bottle in summer, just wrap it in a thin quilt. If the indoor temperature is above 30 degrees in dog days, there is no need to wrap it up and put a hot water bottle. You can eat directly indoors for two or three days.
6. In the process of mixing glutinous rice with cold boiled water, don't use too much water, just mix the rice into granules. If there is too much water, the sweet wine will not be sweet.
7: Steamed glutinous rice should be soft and hard, the liqueur will be very clear, and the liqueur made too soft will be turbid. If the glutinous rice feels too hard, sprinkle a little water and stir well before steaming.
8. Soaking rice in hot weather can be shortened to more than 3 hours. Soaking rice at room temperature will be sour after a long time, or it can be soaked in the refrigerator. You can also soak and steam for a short time, but in the process of steaming, sprinkle water and stir evenly before continuing steaming. If the rice sprinkled with water once is still hard, you can repeat this step until you are satisfied.
