1. First, cut the pork into even-sized shreds (or buy ready-made tenderloin directly), then add a proper amount of salt, a spoonful of cooking wine and an egg white to marinate for ten minutes.
2. Then start to cook the necessary braise in soy sauce: one spoonful of cooking wine, two spoonfuls of soy sauce, three spoonfuls of sugar, four spoonfuls of vinegar and five spoonfuls of water.
3. After curing 10 minutes, evenly coat the meat with a proper amount of raw flour. I forgot to take pictures here.
4. Next, start frying. After the oil is heated, the meat wrapped in raw flour is repeatedly fried in the oil pan until the color is yellow.
5. Leave oil in the bottom of the pot, heat it, add chopped onion, ginger and garlic and saute until fragrant, then pour the prepared braised juice into the pot.
6. After boiling, add the fried shredded pork to collect juice.
7. Put the pot on the plate, and the sweet and delicious braised pork tenderloin will be ready.
