According to the plan, the trade association organizes and commends a number of "Beijing time-honored restaurant chefs" (tentative names) every year. The recognized "Beijing Time-honored Restaurant Chefs" are included in the Beijing Commercial System Expert Database as experts in the catering field, and relevant departments will also actively organize the time-honored restaurant chefs to participate in the selection of special allowances for technicians of the Beijing Municipal Government and enjoy corresponding treatment. In order to encourage young people to inherit the skills of time-honored brands and encourage time-honored catering enterprises to resume the traditional apprenticeship ceremony. Establish rules and regulations, gradually reform the existing collective inheritance mechanism, ensure the decision-making power of skill inheritors when choosing apprentices, encourage skill inheritors to teach with apprentices in cooking school, let more young people learn the traditional catering skills of time-honored brands, and realize the "sharing, inheritance, learning and inheritance" of time-honored catering skills forever.
In addition, in order to promote the standardized development of time-honored enterprises, Beijing will explore the dual-track system of signature dishes, solve the contradiction between modern large-scale production and traditional handicraft skills, identify a number of signature dishes demonstration stores, and promote industry exchanges. It will also play the role of industry associations and expert database, support industry associations to formulate Beijing cuisine group standards with time-honored catering cuisines as the main body, and establish industry norms.
