Ingredients: low-gluten flour 5 1g, 3 eggs, salad oil 24g, fresh milk 24g, fine sugar 54g.
Accessories: whipped cream 200g, sugar 20g, cream icing, bean paste and honey beans.

6 inch Qifeng cake material:
Three eggs (about 50g each), low-gluten flour 5 1g, salad oil (tasteless vegetable oil) 24g, fresh milk 24g, fine sugar 36g (added with protein) and fine sugar 18g (added with egg yolk).
Separate the yolk, and make sure that there is no oil or water in the egg white bowl.

When beating the egg whites into fish's eye bubbles with an egg beater, add 1/3 fine sugar and continue beating until the egg whites begin to thicken.

When the foam is coarse, add 1/3 sugar. Continue to beat until the protein is sticky and lines appear on the surface, and add the remaining 1/3 sugar. Keep playing for a while. When the eggbeater is lifted, the egg white can pull out the curved sharp corner, indicating that it has reached the level of wet foaming. When the eggbeater is lifted, the egg white can pull out short and upright sharp corners, indicating that it has reached a dry foaming state and can stop stirring. Put the beaten egg whites in the refrigerator for refrigeration.

Add salad oil, milk sugar and sugar to the egg yolk in turn.

Stir the egg yolk paste evenly.

Add the sifted flour.

Stir gently and evenly with a rubber scraper. Don't stir too much to avoid gluten in flour.

Fill the egg yolk paste with 1/3 protein. Gently stir with a rubber spatula (stir from bottom to top, don't stir in circles to avoid defoaming the protein)

After stirring evenly, pour all the egg yolk paste into the bowl filled with egg white and stir evenly in the same way until the egg white and egg yolk paste are fully mixed.

Pour the prepared cake paste into the mold, smooth it, hold the mold with your hands and shake it hard on the table twice to shake out the big bubbles inside.

Put it in a preheated oven 150 degrees for 30 minutes, 175 degrees for 30 minutes.
Take the baked cake out of the oven, immediately put it upside down on the cooling rack until it cools, and then demould it.

Cut the cake into three pieces for later use.
