80g meat floss+12 salted egg yolk +90g salad dressing.
Practice (about 20 pieces)
The steps are as follows:
1. Take the tender leaves of wormwood and beat them into wormwood paste. This time, I used 85g of wormwood cream. Excess paste can be sealed in a fresh-keeping box and put into the cold storage for later use (it can be kept in the cold storage for a long time after being mashed);
2. Weigh 200 grams of glutinous rice flour +85 grams of wormwood paste +28 grams of sugar +85 grams of water, and knead into light green glutinous rice flour dough;
3. Take another bowl, pour in 100g corn starch, add 60g freshly boiled water, and quickly stir with a scraper to form a transparent corn starch dough, and mix the sticky corn starch dough in step 2 with the corn starch dough;
4. Sprinkle a little white wine on the 12 salted egg yolk to remove the fishy smell, put it in a steamer and cook it for 10 minute, then grind the egg yolk into powder with a tool, add 80g of meat floss and 190g of salad dressing, and mix it into stuffing balls.
5. Take a proper amount of flour dough, knead it into a circle, press it into a circle, add the stuffing dough and close it. The bottom is padded with silicone paper to avoid sticking to the basin.
6. After boiling water on a large fire, steam the green balls in a steamer for 8- 10 minutes. After cooling, wrap it with plastic wrap.
