On a trip to Guangxi, I tasted a local dish in yangshuo beer fish, which was quite delicious. After I came back, I was obsessed with the taste of this dish, so I found a guide online and tried to follow the steps myself. Garlic, 5 cloves of green pepper and 4 lemon juice? 2 tablespoons cooking wine

1. This fish has been eviscerated after it was bought. After you come back, clean it, evenly coat it with proper amount of salt, cooking wine and raw powder, and marinate it with a few drops of lemon juice for about 10 minutes.
2. Zanthoxylum bungeanum, ginger, garlic and onion are all cut for use;
3. Heat the oil in the pot. When it is 50% hot, add the marinated fish, fry it slowly over medium heat, pour it with a spoon while frying, fry until both sides are golden, and take it out. Continue to burn the oil on a large fire, pour it into the oil pan again and fry for 5 seconds, then immediately take out the oil and pour out the excess oil;
4, leave the bottom oil in the pot, add ginger, garlic, onion, small incense, pour in Chili, stir fry evenly and remove;
5, pour a small amount of fried fish oil into the pot, add fried fish, pour beer, and boil over medium heat;
6. Add salt, pepper, soy sauce, soy sauce, and simmer for about 5 minutes;
7. Uncover the lid, pour in the fried peppers and continue to stew for about 2 minutes. Finally, the juice is collected by fire, and the soup 1/3. Add salt to taste according to personal taste and serve.
After frying the fish once, continue frying it again, and the fish will be more tender. Stew the fish and beer together for a while, so that the special flavor of beer can penetrate into the fish and taste better. This dish is actually not complicated.
