chow mein
Ingredients: cowpea, water bamboo, mushrooms, red pepper, green pepper, minced garlic and Jiang Mo.
It's good to mix the noodles evenly before they dry.
You don't have to roll it into a big round piece with a big board, so the dough sheet is folded.
Cut it into almost wide strips and make it wider, otherwise it will be broken when frying.
Cook until it is 80% cooked, take it out, let it cool, and drain the water (I forgot to mention that salt should be added to the water for cooking noodles to make them taste. )
Heat the pan, add corn oil, stir-fry the bottom strip first, and add vegetables and stir-fry for a while.
Stir-fried noodles can be served in washed purple cabbage and sprinkled with Chili oil when eating.
================================
Boil the noodles in boiling water for about one minute. If you use dried noodles, cook them over medium heat, so as to ensure that the outside and inside of the noodles are cooked.
Then pick up the noodles and soak them in cold water immediately, so that the noodles are cold and chewy.
Then put the meat or beaten eggs salted with soy sauce and salt into the oil pan and fry them, and then add your favorite vegetables (such as corn, carrots, green peppers and onions). . . ) stir fry together (this is my favorite step, hehe);
When frying, put salt first, then add soy sauce, vinegar, sugar and chicken essence, and decide how much to put according to your own taste;
When it is almost cooked, add a small amount of ketchup (this is the most important link, you can't put more or less);
Finally, remove the noodles from the water and pour them into the pot to stir fry. Carefully mix the noodles with the seasoning. It's best to stir up the noodles with chopsticks, so that every noodle is delicious ~ ~
