Chop the shallots for later use. Add a proper amount of water to a boiling pot and bring to a boil.

Add soy sauce, salt, monosodium glutamate and lard into an empty bowl and pour into half a bowl of boiling water. After the seasoning is washed away, it is noodle soup.

The boiling water left in the pot is used to cook noodles. Serve after cooking, drain, put into the noodle soup prepared in the previous step and sprinkle with chopped green onion.
