Ingredients for beef soup and vermicelli: 0/2 vermicelli/kloc-0 (about 480g), 4 beef, 4 loofah (about 160g), oxtail soup 1 cup, 2 lemongrass and a little onion. Ingredients: bacon: 1 teaspoon soy sauce and sugar, a little oil, corn flour, pepper and citronella. Sauce: 3/2 tsp cornstarch, 1 tbsp oyster sauce, 5 tbsp water. Practice: 1, slice rice noodles (arbitrary thickness) and cut citronella.
2. Slice the beef, marinate it with bacon for half an hour, saute it with tender oil, and then cook it with sauce.
3. Cut off the edge of the towel gourd, cut it into pieces and blanch it with boiling water.
4. Cook oxtail soup, simmer citronella for 5 minutes, take it out, and add appropriate amount of salt to taste.
5. Cook the rice noodles, put them in a bowl, add beef and loofah, pour in the cooked oxtail soup, sprinkle with onions and serve. Remarks: When the vermicelli is used for frying, the ready-made sliced vermicelli should be selected, because it is solid and refreshing to eat. If it is used to put noodles in soup, it is appropriate to choose the whole uncut noodles as the material, because it tastes soft and smooth.
