The specific method of roasting pork belly in Hakka casserole is as follows:

Step 1: Add flour to the pork belly (ordinary flour will do), and you can add a few more spoonfuls. If the flour is too small to clean the mucus on the pork belly, add a little peanut oil and wash it repeatedly for a few minutes by hand.

Step 2: After the first scraping, put warm water to remove mucus, and then repeat the first step three or four times until there is no mucus on the pork belly.

Step 3: turn the pork belly over, that is, the oily side, and then remove the oil, which can be scraped with a knife. After cleaning the oil, add flour and oil to this side and wash it (as in the previous step).

Step 4: Turn the washed pork belly back to its original side, rinse it twice, then put it in the pot, cover the pot and cook for 5 minutes.

Step 5: After 5 minutes, we add cooking wine, cover the pot and cook for another 5 minutes.

Step 6: Ok, time is enough, turn off the fire, take it out to cool, then cut it into strips, cut it in the middle, cut off the excess fat inside, and then cut it into small pieces.

Step 7: Add appropriate amount of pepper, cooking wine, soy sauce, oyster sauce, salted chicken powder, peanut oil and a little shredded ginger into the chopped pork belly, stir well and marinate for 30 minutes.

Step 8: Prepare a casserole, pour in the right amount of oil, then pour in the marinated pork belly, and then smooth the pork belly.

Step 9: Cover the pot, bring to a boil and turn to medium-low heat for 15 minutes.

Step 10: After 15 minutes, stir-fry the pork belly to prevent it from sticking to the bottom of the pot, then cover the pot and simmer for 5 minutes (this time depends on how much pork belly juice is left, if there is any, you can stew it for a while).

Step 11: OK, you can cook. Sprinkle some chopped green onion to decorate the dish. You don't have to do it if you don't like it.
