The main ingredient when making food, it has the function of removing fishy smell and greasiness. It is generally used in the following three ways:
(1) Boiling in pot. It is mostly used when frying meat dishes. When frying meat, you can add an appropriate amount of chopped green onion or shredded green onion, when making stews, braised meat dishes, or when making fish, duck, or seafood, add green onion segments. Stir-frying green onions and mutton can remove the fishy smell and make the mutton taste more delicious.
(2) Mix the stuffing. When making dumplings, steamed meatballs, and wontons, you can add chopped green onion to the filling.
(3) Seasoning. When eating roast duck, you can smear some sweet noodle sauce into the lotus leaf pancake, then put it into the duck slices and roll it with scallions, which is especially refreshing and delicious; when making hot and sour soup or hot clear soup, you can sprinkle with chopped green onion and sesame oil at the end. The taste is better; if you add chopped green onions when frying eggs, the fishy smell of eggs can be removed, making the food more delicious.
