To this end, I would like to take this rare opportunity to review the history of Donglaishun, so as to express my high respect and deep thoughts to the predecessors, sages, several leaders and retired workers who have laid a solid foundation and made great contributions to the development of Donglaishun today.

Over the past century, the development and historical evolution of Donglaishun can be divided into two stages before and after the founding of New China.

In the nearly half century before the founding of New China, Donglaishun's entrepreneurial history and development history can be regarded as a microcosm of the development and evolution of modern ethnic catering industry in Beijing. At the beginning of last century, the Qing government implemented the New Deal and opened the market. 1903, with the emergence of the earliest and most famous Dongan market in Beijing, Ding Deshan, the founder of Donglaishun Restaurant, pushed a cart, a wooden box and several benches to the north gate of Dongan market and set up stalls to sell halal snacks, bean juice and cakes, taking the first step of hard work. A few years later, Shi Ding Brothers opened a store and went public, named "Donglaishun". The name of the store was originally called "Donglaishun porridge shop". It's a small shed in Xiao Mu, which deals in bean juice, noodles, pies and mutton offal. 19 12, Dongan market caught fire and the wooden shed was burned. After the reconstruction of the market, Ding Deshan built three tile-roofed houses in the same place, changed the signboard to "Donglaishun Mutton Restaurant" and began to operate meat-washing. Ding Deshan was born in poverty. He earns money by setting up a stall. After starting a business, he has not lost his true nature of being diligent and eager to learn, and he still works hard. Because he is sincere-oriented, stresses authenticity, and is good at learning from other people's management methods and production skills, in a few years, Donglaishun's instant-boiled mutton is as famous as Zhengyang Building in Beijing at that time. In the 1920s, Donglaishun improved the hot pot and other utensils of instant-boiled mutton, and became the champion of instant-boiled mutton in Beijing with its unique materials selection, fine processing, complete seasonings and strong firepower. Since then, Donglaishun has been out of control. It has not only built tall and elegant rooms, but also expanded its business varieties, forming a series of halal dishes integrating explosion, roasting, frying and rinsing, which is unique with Sichuan, Shandong, Hunan and Guangdong cuisines in Beijing and has become a famous time-honored brand in Beijing. Although, in the nearly half century before liberation, due to frequent wars and social unrest, Donglaishun also experienced difficulties and ups and downs, but its business performance has always ranked first in Beijing's catering industry. Diligent pioneering, advancing with the times, continuous improvement and pursuing long-term goals are valuable traditional business concepts of Donglaishun. Honesty-based, customer first, meticulous materials and sweet mouth are the excellent service traditions of Laodonglaishun. These valuable traditional marketing experiences are always worth inheriting and learning from.

The rapid development of Donglaishun was more than half a century after the founding of New China. From 65438 to 0955, with the support of the people's government, Donglaishun successfully realized public-private partnership. In order to develop ethnic undertakings and carry forward the cultural traditions of ethnic minorities, the Party and the government have given great support and help to Donglaishun. Since then, Donglaishun's business scale has been expanding, the staff team has become more tidy and the technical force has become more abundant. Donglaishun Restaurant has not only become a dining place for the broad masses of people to taste halal food, but also an elegant place where celebrities gather. At the same time, it often undertakes the task of receiving foreign heads of state and politicians by the party and the state, and has made great contributions to the country's diplomatic activities and the promotion of friendship with the people of the world. Hu Jieqing, the wife of Lao She, a famous writer, Qi Baishi, Ma, Ma, and other senior celebrities once hosted a banquet for guests and friends in Donglaishun before their death, and left for Donglaishun. Zhou Enlai, Deng Xiaoping, Ye Jianying, Chen Yi and Guo Moruo. The party and the state also hosted many banquets in Donglaishun to entertain foreign heads of state and politicians. Former US President Nixon, former Secretary of State Kissinger, former Japanese Prime Minister tanaka kakuei, Masayoshi Ohira, Mozambican President Zamora, Pakistani President Ishaq Khan, and many important Islamic and national government officials and diplomats all spoke highly of Donglaishun's delicious food.

Especially after the 1980s, with the expansion of China's foreign exchanges and the rapid development of tourism, more and more international friends and overseas Chinese came to Donglaishun to taste instant-boiled mutton and halal food. During the meat washing season, Donglaishun often receives hundreds of foreign guests and overseas Chinese every day.
