Step 1

There are many Mao Mao in bracken, and people who are allergic to it should wear gloves to operate. Soak in water first, then wash away the soil. If the bent part on it is wilted when you buy it back, you can add a drop of sugar to wake it up.

Second step

Soak the dried whitebait for15min, then wash and dry.

Third step

Wash clean and refreshing bracken, break it from the tail by hand, and feel thick and tender. You can't feel it with a knife.

Fourth step

Chop garlic and ginger into rice grains, and cut onion into chopped green onion for later use.

Step five

The sauces of cold salad should be prepared first, and they should be combined first, so that the seasoning effects can complement each other.

Put garlic, Jiang Mo and chopped green onion in a bowl, and then add the lobster sauce. Heat a tablespoon of hot oil, pour it into the spices and stir well. After the oil temperature drops to normal temperature, add light soy sauce, sugar, pepper, sesame oil and red pepper powder, and stir evenly to obtain a complete cold seasoning. Besides bracken, other vegetables can also be used.

After the small whitebait is foamed, it must be stir-fried in a dry pot, seasoned with pepper and sugar, and removed for later use.

Step 7

Add salt and oil to the pot, and blanch the bracken for about 3-5 minutes. When the bracken becomes soft manually, take it out and control the moisture.

Pick up bracken and tear each one by hand, and tear it along the grain. It's a little hot. You can wait until it gets cold. Cut it into small pieces with scissors.

Step 8

Pour the sauce into the bracken and stir well.

Mix bracken until it tastes good, put it in a plate and sprinkle with small whitebait.
