This kind of noodles is called Taihe noodles, not Anhui noodles, which originated in Taihe County, Anhui Province. Generally speaking, there are mutton noodles and beef noodles. People in northern Anhui eat noodles, but people in southern Anhui don't eat much. In our Taihe, everything from snacks to big noodles is coarse noodles, but there is no fine noodles. At present, the boards sold all over the country are modified on the basis of the original boards, giving full consideration to local tastes. They are not exactly the same as the authentic Taihe board, nor can they be called the authentic Anhui board. However, things are always changing, and only by constantly improving ourselves can we get long-term development. Sticking to the rules will only lead to extinction, and so will diet. There is no need to care about authenticity, just delicious.
