As far as my own taste is concerned, the clotted cream and jam scones in English afternoon tea have different tastes and tastes from scones eaten casually for breakfast or when I am hungry.
The scones in English afternoon tea are usually original or with raisins (the raisins on the surface of scones are delicious, slightly bitter and very chewy, haha). This scone should be light in sweetness, moderate in butter content and even slightly dry in texture (but definitely not crisp! ), because it should be eaten with rich clotted cream and jam. (And the scones in English afternoon tea seem to be round, unlike American scones, which can be square or triangular. It is not difficult to find delicious jam now, and it is difficult to find delicious clotted cream (that is, condensed cream, fresh is delicious).

There is also a popular home-cooked dessert-shortcake, in which scones or biscuits are cut in the middle, and a piece of sweetened whipped cream and seasonal fruit are put in the middle (strawberries are the most common collocation), just like the home-cooked scones in English afternoon tea ~
The other one, I think, can be called American scones, which are more casual in taste and shape, and will not feel boring if eaten directly without any cream and jam. This kind of scone will be very sweet and soft. Generally, there are many ingredients ~ fresh fruit, dried fruit, nuts, and sometimes salty, such as cheese scones.
I think the best breakfast scone is blueberry scone from Starbucks in Hong Kong, which is unexpectedly delicious (it should be said that it suits my taste).

This scone is particularly soft, and the cream flavor is not very strong. Eating at room temperature won't feel very dry and hard, so I guess it's not made of all cream, but some vegetable oil is added, so it can keep a soft and moist taste even at room temperature. Especially flakey, you can see the layering when you open it ~
Besides, I haven't found any American scones that I am satisfied with outside, so I will often make them myself. You can easily make great scones by finding your favorite formula and choosing better ingredients. Try buttermilk. If it is not convenient to buy, you can use plain yogurt without sugar, or add lemon juice to milk. It's really different from milk. Just try it!
