Exercise:
1 Wash the whitebait, drain the water with a clean cloth, and add cooking wine, monosodium glutamate, salt, pepper and sesame oil to a large bowl for pickling.

Stir-fry the spoon over high fire, and inject peanut oil to burn it to 60% heat. Tip: There are fake whitebait in the market, so be careful when buying, and beware of counterfeiting. You can feel it with your hands in the middle of distinguishing authenticity. If there are fish bones and fish bellies, it is the real thing. On the contrary, the fish eyes are too three-dimensional, the fish body is too elastic, or the fish body is like powder, which should be fake. Whitebait and white rice fish are similar in appearance, but different in species. The former lives in salty fresh water and lakes, and is larger than white rice fish, and is mostly used for steaming salt and pepper or soy sauce. The latter lives in a fresh water lake, which is thin and tiny, and is mostly used for frying eggs and cooking porridge.

Silver fish soup
Ingredients: whitebait, bamboo shoots, chicken breast, eggs (egg white only), salt, chicken powder, raw powder and chopped green onion.

1. Wash and drain whitebait, wash bamboo shoots with clear water and blanch for later use;
2. Shred chicken breast and mix well with a little salt and cornmeal. Shred bamboo shoots and ham for later use;
3. Put clear water or stock in the soup pot, pour bamboo shoots and whitebait after the water boils;

Ingredients: dried whitebait 15g, 2 eggs, ribs soup (the amount can be poured into 3 empty eggshells), appropriate amount of oil, salt and rice wine.
Exercise:
1. Soak the dried whitebait in hot water 10 minute, and drain it for later use. After breaking the eggs, add salt and beat them into egg liquid with an egg beater (preferably an egg beater).
