Material preparation: shred onion and coriander, chop onion, ginger, garlic and dried red pepper, a little each, and keep pepper particles.
I cut two pieces of dried tofu together, so we can cut them together, which saves trouble. This kind of dried bean curd is relatively thick, and there are also thin dried bean curd on the market. The following steps will be different. Please look carefully.

4g starch is diluted with water. My bowl is very small, and the amount of water is about half that of an ordinary rice bowl. Please reduce the amount of starch if there is less dried tofu.
Prepare alkaline noodles. My 400g dried bean curd uses 1.5g alkaline noodles. This little spoon is 2g. If there is less dried tofu, just use1g. If you don't have a measuring spoon, pinch a little. This can't be too much, or the tofu will be broken.
Boil a pot of water that covers the dried tofu, and add alkaline noodles after boiling.
Add dried bean curd, and pay attention to: blanch the thick dried bean curd for 40-50 seconds, and blanch the thin dried bean curd for 30 seconds. Try not to exceed this time, otherwise the dried tofu will be easily broken, and take it out immediately after turning off the fire. Using alkali can make dried tofu taste tender and smooth.
Blanch the water and put it in a container. Don't drain water with a drain pipe.
Put base oil in the pot, not too much.
When the oil is hot, turn off the minimum fire and smoke to avoid burning yourself.
Add oyster sauce
Add sugar. If you want to hurry, you can put these samples together in advance and put them together in the base oil.
Cook for a while, but not too long, it will burn easily.
Add water, almost just enough to cover the tofu, boil it, taste it after boiling, and add oyster sauce if it is weak.
After boiling, add the dried tofu.
Stew for a few minutes, let the taste enter the tofu, add the dilute starch paste before taking out the pot, turn it over a few times, and wrap it evenly with the paste.
Put it in a container for later use. I use a big bowl if I have more, and a plate if I have less.
Put shredded onion and coriander on the surface of tofu.
Add base oil in another pot, a little more.
Add chopped raw materials

Pour it on shredded onion and coriander while it is hot. A little more oil will smell good, but if you are old people or children, please reduce the amount of oil.
When finished, the dried bean curd tastes smooth and delicious.
