What is a leek box?
Method one
1, wash leeks and dry them for later use.
Enlarge the flour into a plate, sprinkle some salt, mix well, add 1 bowl of water and eggs, mix well with chopsticks, knead into smooth dough, cover and wake up for half an hour.
3. Prepare the stuffing when sober up, cut the leek into fine powder, put it in a bowl, pour some peanut oil, a few drops of sesame oil and pepper, and mix well.
4. Chop the pork into minced meat, add salt and season with a little soy sauce.
5. After the oil in the pot is heated, put the minced meat in the pot and spread it out. Stir-fry and serve. After cooling, put it into chopped leek and stir it evenly to make stuffing.
6. Divide the proofed dough into 4 parts, sprinkle dry flour on the chopping board, and roll a small part on the chopping board to form a round dough.
7. Put the leek powder on the surface and fold the edge into a beautiful flower like oil angle. Sprinkle some salt on one side of the piece, then fold it in half and compact the edge (to prevent stuffing).
8. Heat the oil in the pot, put the leek box in the pot, fry until both sides are golden, and then serve.
Method 2
1. Peel the raw pork and cut it into rice grains with a knife. Wash leeks and cut into small pieces. Sit the ladle on the fire, and add the pepper oil. When the oil is hot, first put the pork and Jiang Mo into the fried pork, then add the soy sauce and monosodium glutamate to stir fry to get the ladle, put it into the pot, and then add the leek and mix well to make stuffing.
2. Divide the flour into 325g and 175g. First, pour the extra part into the basin, add 75g cooked lard, rub it evenly, then pour warm water (while stirring) and beat the ears, rub it evenly and tie it up to make leather noodles. Then, 175g flour and 75g cooked lard are mixed and kneaded into crispy noodles.
3. Knead the two kinds of dough into strips and pull them into five pieces, with the same number. Press the dough into a round crust, wrap it in pastry dough, flatten it by hand, roll it into a rectangle in one direction with a rolling pin, then roll it up and flatten it by hand, and then roll it out. Finally, roll them into 6 cm long rolls, cut them into two equal sections from the middle with a knife, and stand the knife down on the chopping board. Then put the stuffing in the middle of the wafer, knead the edge into lace and put it in the oven, and bake for a few minutes on low heat.
4. Add oil to the frying pan and fry on both sides with low heat.
skill
Putting vermicelli in the stuffing can absorb the water in leek and avoid making soup. You can't roll lace, you can press it on the edge of the dough with a fork. [ 1]
