Steamed pork belly with green vegetables

-Prepare ingredients-
Pork belly 400g, dried plum 50g-80g, onion 2-stage soy sauce 1 tablespoon cooking wine 1 tablespoon white wine 1 tablespoon white sugar 1 tablespoon ginger 5 onions 2 oil and salt right amount of brown sugar right amount of tsaoko right amount of soy sauce right amount of mushrooms.
-Steps-
1. Prepare the ingredients, wash the plum vegetables and mushrooms, soak them in warm water, wash the pork belly, beat the onions, and put the brown sugar, white wine and soy sauce into a bowl for later use.
2. Put water, scallion and ginger slices (partially) into the pot, add pork belly, boil and skim the floating foam, cook for 20 minutes, and take out (the photo is blurred by fog).
3. Put the pork belly fished out in the last step into the bowl prepared in the first step and spread the sauce evenly.
4. Take a pot of oil, add the marinated pork belly when it is 70% hot, fry until golden brown, and take it out.
Blanch the charred pork belly with cold water, so that some oil can be washed away at the same time.
6. There is a little oil left in the oil pan, add the soaked dried plum vegetables, stir-fry with cooking wine, soy sauce and sugar, and stir-fry until the aroma is rich.
7. Take a new bowl, put shallots under it, spread chopped pork belly, soaked mushrooms, ginger slices, star anise, tsaoko and fried dried plums in turn, and steam for 30 minutes.
8. Out of the pot, buckle a plate bigger than the steaming bowl on the bowl, turn it over, take off the bowl, remove the onion and sprinkle with chopped green onion.
