1, shredded celery
Ingredients: celery and lean pork.
Ingredients: carrots in moderation.
Seasoning: garlic, starch, cooking wine, soy sauce, lard.
Exercise:
(1) Peel off the old petals of celery, remove the leaves and cut into sections.
(2) Wash and shred lean pork.

2. Fried meat with mushrooms
Ingredients: lean pork and fresh mushrooms.
Seasoning: lard, salt, monosodium glutamate, cooking wine, onion, starch, ginger, pepper powder and pepper.

(1) Slice lean pork and mushrooms separately.
(2) Mix the meat with salt, cooking wine and starch.
(3) Mix cooking wine, monosodium glutamate, onion, ginger, soup, pepper noodles, pepper noodles, starch and water to make juice.
(4) Heat the wok and add oil. When the oil is hot, cut the meat slices and push them with a spoon until the shredded pork is scattered.

3, moo Shu meat
Ingredients: lean pork, eggs, dried fungus and cucumber.
Seasoning: soy sauce, salt, cooking wine, edible oil and sesame oil.
Exercise:
(1) Slice the lean pork, beat the eggs into a bowl, beat them evenly with chopsticks, soak the dried fungus for 5 minutes, remove the roots and tear them into pieces, cut the cucumber into diamond pieces with a diagonal knife, and shred the onion and ginger.
(2) ignite the wok, put the oil in, heat it, add the eggs and stir-fry them into irregular pieces, and put them on the plate.
(3) Light the wok, heat it with oil, stir-fry the shredded pork until the meat turns white, add the onion and shredded ginger, and stir-fry until it is 80% cooked.
(4) Add cooking wine, soy sauce and salt, stir fry, add fungus, cucumber and egg, and pour sesame oil after cooking.

Fried lean meat with garlic moss
Ingredients: garlic moss, lean meat.
Seasoning: garlic, vegetable oil, salt, chicken essence, sugar, starch, rice wine and soy sauce.
Exercise:
(1) Wash garlic moss, cut into sections, shred lean meat, marinate with a little salt, chicken essence, rice wine and sugar, add raw flour seasoning spoon, and add water to mix well.
(2) Take the oil pan, fry the lean meat quickly, and serve it as soon as it changes color.
(3) Start the oil pan again, add garlic and stir-fry, add garlic moss, add salt, sugar and a little soy sauce, and add a few drops of rice wine and stir-fry a few times.
(4) Add a small amount of water and continue to stir fry. When the garlic moss is almost ripe, pour in lean meat, stir well together, drop a few drops of sesame oil, and take out the pot.
Tips:
(1) Lean meat should be light in color. Don't add soy sauce when frying. If it looks too light, add less salt and add some soy sauce to adjust the color.
(2) When frying garlic moss, if there is a lot of juice in the end, you can hook a little thin sauce: mix it with starch and water, pour it into the pot and stir fry, and collect the juice.
