Half a catty of fresh pork, one or two pickles, 3-5ml of soy sauce, one spoonful of sweet noodle sauce, Jiang Mo 10g, and appropriate amount of pepper.
Practice steps:
1. Boil the whole pork in boiling water for about 5 minutes. After taking it out and washing it, poke the skin next to it with a toothpick and poke many dense holes in the skin.
2. Mix the soy sauce with the sweet noodle sauce and rub it on the pigskin for about 2 minutes.
3. Pour more vegetable oil into the pot and heat it to 70%. Add the meat and fry until the skin turns golden yellow. Take it out and soak it in warm water until the skin is loose and wrinkled.
4. Take a proper amount of lard and melt it in a wok. Add pickles and stir-fry until fragrant. Add a little soy sauce and stir well for later use.
5. Drain the soaked pork and cut it into thin slices. Then pour the sweet noodle sauce, Jiang Mo and soy sauce into the juice and pour it on the sliced meat. Stir well and put it neatly into a steaming bowl.
6. Spread the fried pickles evenly on the meat slices, then put a little pepper granules and steam them in a boiling steamer for 3 hours.
