Sauté ed shredded bamboo shoots with green vegetables in summer.
Ingredients: 200g fresh bamboo shoots, onion 1 root, half red pepper, 3 auricularia auricula, garlic 1 petal.
Seasoning: salt 1 teaspoon, soy sauce 1 teaspoon, mushroom essence 1 teaspoon.
Exercise:
Slice bamboo shoots, peppers and onions, shred soaked auricularia auricula, mince garlic, heat garlic in a wok, stir-fry minced garlic, add shredded peppers, onions and auricularia auricula, add shredded bamboo shoots, add salt, stir-fry soy sauce evenly, and finally add mushroom essence.

If you don't eat spicy food, you can switch to colored persimmon pepper. If there is no mushroom essence, you can use ordinary chicken essence. Don't use dark soy sauce. The color of fried bamboo shoots is black, so it is less salty to add salt with soy sauce.
