Cut the eggplant into small pieces for later use (or slice)

Chop garlic, star anise and coriander.

Half a bag of sweet noodle sauce (can be put according to personal taste).

Heat the pan, add a little oil, and stir-fry the cut eggplant.

After the eggplant is taken out, put oil in the pot. When the oil is hot, add star anise and half garlic foam. After frying, turn to medium heat and add sweet noodle sauce. Stir-fry the eggplant for two or three times, roll it evenly, then add some water (not much water), and then add soy sauce, salt and sugar to taste. Finally, stir the remaining garlic evenly and add coriander.
