The "Mushu" here is alfalfa grass, not the "Mushu" written on the menu of ordinary restaurants. This kind of alfalfa is called alfalfa because the fried eggs are similar to alfalfa, so it is named.
Stir-fried mushu with tomatoes is scrambled eggs with tomatoes.
Mu Shu pork is fried with eggs, usually decorated with fungus and cucumber slices.
