The recipe my dad taught me not only goes well with wine but also with rice.
1. Hot and sour shredded potatoes:
Cooking method: cut potatoes and green peppers into shreds, Wash away the starch. When the water boils, add shredded potatoes and cook for one to two minutes. Remove and soak in cold water. Add minced garlic, dried chili peppers, white sesame seeds, top with hot oil, three spoons each of light soy sauce and balsamic vinegar, a spoonful of sugar, a little salt, and mix well. Pour the sauce over the shredded potatoes, add coriander, and mix well.
2. Old vinegar peanuts:
Prepare ingredients: peanuts, diced onions, diced cucumbers, and diced green peppers.
Cooking method: 5 spoons of mature vinegar, two spoons each of light soy sauce and oyster sauce, three spoons of sugar and half a spoon of salt, mix well, cook the sauce until thick, pour on the sauce and mix well.
3. Cold cucumber:
Cooking method: Cut the cucumber into strips and marinate with a spoonful of salt to remove the moisture. Garlic slices, spicy millet, white sesame seeds, and drizzled with hot oil. Add 5 tablespoons of light soy sauce, three tablespoons of vinegar, one tablespoon each of sugar and chili oil. Pour on the sauce and mix well.
4. Boneless Chicken Feet with Passion Fruit and Lemon:
Cooking method: Cut off the chicken feet, add ginger slices, cooking wine, and cold water and cook for 10 minutes. Remove, wash, and soak in ice water for 20 minutes. Cut away from the line and twist the joint to remove the bone. Add two tablespoons each of minced garlic, chili powder, and white sesame seeds, and drizzle with hot oil. Mix six spoons of light soy sauce, two spoons of mature vinegar, a little salt, and two spoons of sugar. Pour the sauce over the chicken feet, add lemon, coriander, passion fruit, and spicy millet, mix well, and marinate for an hour.
5. Five-spice sauce peanuts:
Prepare ingredients: Wash the peanuts.
Cooking method: 5 tablespoons each of light soy sauce and salt, 2 tablespoons dark soy sauce, pour water to cover the peanuts. Add star anise, cinnamon, bay leaves, garlic, dried chili peppers, sugar, ginger, and Sichuan peppercorns, cover and cook for 30 minutes, turn off the heat and soak for three hours.
6. Hot and sour diced radish:
Preparation of ingredients: Peel and dice the radish, add two spoons of sugar, marinate for one hour, remove, wash and drain.
Cooking method: 8 spoons of rice vinegar, 1 spoon of sugar, half a spoon of salt, 2 sticks of chili millet, add cold and boil, add radish, mix well and refrigerate for two days.
