According to legend, as early as the Ming Dynasty, Shandong merchants came to Tianjin, and the pancakes they brought contributed to the production of pancake fruit in Tianjin. Now the pancake fruit in Tianjin has applied to become an intangible cultural heritage, and countless foreigners will want to see it after coming to Tianjin, including me.
Pancakes in most places are made of white flour, but I didn't know until Tianjin that the original authentic Tianjin pancake noodles were made of mung bean flour.
And in the local area, most shops can bring their own eggs. In the eyes of old Tianjin people, this not only represents nutrition and health, but also symbolizes order. Everyone comes first served, eggs are replaced by people, and they line up in an orderly way.
Spread the batter into dough, beat a few eggs on it, add the freshly fried castor and chicken gizzards, spread the sauce and roll it into a lovely shape, and a set of perfect pancake fruits is born.
Bite it down, the soft waxy skin and hot crisp fill the mouth, mixed with a touch of bean and egg fragrance. At that moment, I really thought it was worth waiting in line.
2. "Tianjin Three Musts"
Speaking of local snacks in Tianjin, I believe that the first thing that comes to mind is the "three wonders of Tianjin": Goubuli Steamed Bun, 18th Street Twist and Ear-pierced Fried Cake, which are inseparable from the daily diet of Tianjin people and have become the pride of the local people. So when I settled in Tianjin, the first thing I did was to go straight to Tianjin.
Street 18 twisted:
18th Street Twist is different from ordinary twist. First, add sesame seeds, peach kernels, melon seeds and other small ingredients to the hot noodles to make crisp strips, then rub them into twists with sesame seeds dipped in white flour and fry them in an oil pan. This big twist looks like a Chinese knot, revealing a feeling of good luck. Cut off a section of the entrance and taste it. Crispy twist and sweet fruit are mixed together, and people can't help but exclaim with oil and sweetness.
Goubuli steamed stuffed bun:
Goubuli steamed stuffed bun, the first of the "Tianjin Three Musts", is famous all over the country for its delicious, fragrant but not greasy taste. And it is said that the workmanship is also extremely exquisite-each steamed stuffed bun is regular with a discount of 15. Take it out of the drawer and it looks like autumn chrysanthemum in the fog. Take a bite, oily and watery, and put it in your mouth, with endless aftertaste. That's a comfort!
Ear hole fried cake:
Speaking of Tianjin's classic civilian food, the most famous one is fried cake with ears and eyes. It's tender outside, and the sweet and waxy taste still lingers in my mind, which really makes people want to stop.
However, there are many local fried cake shops in Tianjin, but I still recommend the fried cake in the head office, but the popularity there is high, so friends who want to eat should queue up early.
3, crispy rice dishes
I have long heard that in Tianjin people's breakfast, crispy rice is always unshakable. Even snacks such as Goubuli Steamed Bun, 18th Street Twist and Erduoyan Fried Cake are popular all over the country, but in the minds of Tianjin people, crispy rice is always the "taste of home".
So, what exactly is a crispy rice? I'm really curious.
Literally, it seems that this is a dish made of rice crust. But in fact, in Tianjin, its pronunciation is "Gaba cuisine", and there is neither crispy rice nor food in it-it has nothing to do with the name.
From the root point of view, crispy rice and pancake fruit are actually "brothers" because they all have a common source-Shandong pancakes.
Pot dishes are pancakes made of mung bean powder, cut into thin slices, put into the prepared marinade, and then add small ingredients such as coriander, dried bean curd and sesame sauce to eat.
To tell the truth, just looking at these ingredients, I feel that my mouth is full. Bite it down, but you still don't live up to your expectations. Your mouth is salty and fragrant, and the more you chew it, the more fragrant it becomes. No loss, there is a local saying: people who eat all over the world are not greedy and love a pot of rice.
