Specific practices:
Buy fresh prawns, cut off the whiskers and claws, the mouth is neat and beautiful, and the entrance is convenient. Remove the shrimp gun and whiskers, remove the sand line, and then marinate with a little cooking wine to remove the fishy smell. Slice ginger and garlic (about 1:3) and cut shallots.
Pour more oil into the pot, heat it to about 60% to 70%, add prawns and turn it over quickly. When one side of the shrimp turns red, add shredded onion and ginger, and then turn it over.
Leave a little oil in the pan, stir-fry ginger and garlic over medium heat, add tomato sauce (about 3 tablespoons) or peeled and chopped tomatoes (only about 3 tablespoons), and stir-fry red oil. Pour in the juice made of white sugar, white vinegar, soy sauce and salt and stew for about 2-3 minutes.
After about 1 or 2 minutes, open the lid, add onion, season with salt, and collect the juice over high fire. After about 20 seconds, the soup can be cooked almost.
Please enjoy your meal.
