white radish, carrot, salt, sugar, white vinegar, red pepper and ginger
method
1) peeled white radish and carrot respectively, cut into thick strips, add salt and mix well, and marinate for about 2 minutes to taste.
2) put about 4 ml of water in the pot, add sugar and boil until it melts.
3) after turning off the fire, add white vinegar (white vinegar must be used), stir it into sweet and sour water, and let it cool.
4) after washing the red pepper, cut a hole on one side and slice the ginger.
5) The pickled radish comes out of the water, and it is pinched and drained.
6) Put the radish strips into a glass fresh-keeping box, add ginger slices and red peppers, pour in the cooled sweet and sour water, cover the radish strips, and put them in the refrigerator for 2-3 days to taste.
Practice
1. Wash the radish and cut it into strips, the shape is about 1cm long and 1cm wide, and spread it out on the balcony to dry;
2. The drying time depends on the weather. If it is sunny, it is usually 2-3 days. If it is cloudy, it will take about one week.
3. Put the dried radish strips in a clean basin, sprinkle salt on them, and rub them back and forth by hand to ensure that all the radish strips can be covered with salt, then compact them by hand and put them in the shade for one day. The next day, the radish strips were rubbed and grasped by hand again, then the shredded ginger cut in advance was mixed into the radish strips, and the radish strips were put into a jar that was washed and dried, and then placed horizontally and vertically with bamboo pieces for compaction;
4. Press the washed pebbles on the bamboo pieces, and then add cold boiled water until the water can not exceed the stones;
5. Cover the jar, and a little water can be poured around the lid to make a water seal
6. Put the jar in the shade for 15 days to make sour radish strips. When eating, take out some radish strips and rinse them for later use.
7. Add a little oil to the pot;
8. Add pepper, star anise and pepper to stir-fry for fragrance after oil is heated;
9. Pour the radish strips into the pot and stir-fry them twice, then quickly take them out of the pot and serve.
