Pork feet seasoned with soy sauce

Ingredients: trotters 12kg, fresh soup 15kg.

Formula: star anise 1 1.5g, cinnamon 10g, fragrant leaves 4g, fennel 6g, Anemarrhena asphodeloides 3g, clove 1g, angelica dahurica 8g, tsaoko 10g, cardamom 3g, cardamom1.

Seasoning: spiced powder 13g, onion 30g, ginger slice 35g, pepper 10g, cooking wine 80ml (or liquor 10ml or beer 60ml), salt, pepper, monosodium glutamate, honey and sugar color 45g.

Exercise:

1. Clean all the hairs in the skin and crevices of pigskin first, then wash and drain the water, and cut 2 knives on the pig's trotters to facilitate the later taste.

2. Add onion 15g, ginger 15g, cooking wine, pepper, allspice powder and salt to the trotters, marinate for 6 hours, and turn the noodles every 2 hours.

3. Wash pig's trotters, put them in cold water, blanch for about 13 minutes, then take the pot out of the cold water, put some honey in it, put it in a pot with 70% oil temperature, and fry until golden brown.

4. Wash all the seasonings, put them into fresh soup, bring them to a boil with strong fire, and cook them with low fire for 50 minutes, then add all the remaining seasonings and trotters, bring them to a boil with strong fire, then marinate them with slow fire for 40-45 minutes (the trotters are ripe and soft), and finally take out the pot from the fire and let the trotters soak in it for 3 hours before eating.

Four suggestions:

1. The trotters must be marinated and blanched, which can make the trotters taste in advance and remove the fishy smell.

2. Put honey on the trotters and fry them, which can make them taste more fragrant and better.

Be sure to cook the brine first, then put the pig's trotters. If there is no fresh soup, you can use water instead, but the flavor is not as good as fresh soup.

4. Don't completely marinate the trotters, otherwise they will be marinated when they are soaked in salt water, and the finished products will not look good.
