Yellow river carp with Henan flavor is a classic traditional dish in Henan, namely braised yellow river carp, steamed yellow river carp and sweet and sour eel. It is made from Henan Yellow River carp by three cooking methods: braising, steaming and soft frying in sweet and sour.

Fried noodles with sweet and sour fish, referred to as fried noodles with carp for short, is a traditional dish in Kaifeng City, Henan Province, which consists of fried fish with sweet and sour and fried noodles. This dish is made of carp, especially the Yellow River carp. After preliminary processing, the two sides of the fish are corrugated with a bevel knife and fried thoroughly in a hot oil pan.
Carp roast noodles were famous as early as the Song Dynasty. It's a pity to come to Kaifeng without tasting the noodles with sweet and sour fish. Carp Baked Noodles was selected as one of the top ten classic dishes in China and Henan Province, sponsored by China Cuisine Association, and included in the list of regional classic dishes in Henan Province.
