Steps of stewing mussels with salt ribs and tofu
1. Preparation: After the mussels are bought in the supermarket, they will be cleaned, washed with salt, and then the hard parts of mussels will be knocked into hot water with a rolling pin to drain; Blanch the tofu with hot water first, cut the beany smell into small squares and drain; Remove the roots of Pleurotus eryngii and wash it for later use; Wash the salted ribs and soak them for half a day in advance.
2. Pickled ribs: Choose several large pieces of good black ribs; Stir-fry salt (7%-8% of meat weight), add pepper and stir-fry until fragrant; Rub it evenly on the surface of the meat while it is hot, put it in a jar and press it with something; Turn it every two days after coming out of the water and air it in the shade for about ten days; Chop the ribs into small pieces, marinate them, put them in paper bags, and store them in the refrigerator for convenience. When it gets warm, it will be moved to the freezer for storage.
3. Cut the mussel meat into large pieces of hot oil, stir-fry and add ginger onion, garlic cloves and yellow wine to remove the fishy smell.
4. Put the fried clam meat and salted ribs into the casserole and add the ginger slices.
5. Add appropriate amount of boiling water, simmer for half an hour after boiling, then add Pleurotus ostreatus and tofu blocks, and stew for another half an hour.
6. Sprinkle chopped green onion and pepper before cooking. It's delicious and doesn't need any other seasoning at all.
