The steps are as follows:
1.? Wash pork belly, put it in a cold water pot, add ginger slices and pepper, boil over high fire and blanch for 6 minutes. Then, take it out and drain.
2.? Pour a proper amount of braised soy sauce into the container, put the pork belly in, rub the soy sauce on all surfaces of the meat and rub the skin several times.
3.? Then turn it over several times, so that each side is covered with soy sauce, and let it stand for 10 minute.
4.? Then, put the oil into a cold pot. When the heat reaches 80%, add pork belly and soy sauce and fry for 2 minutes, with the skin facing down. Pay attention to the middle fire for 2 minutes, and don't exceed this time, otherwise it will be burnt and there is no need to turn it over. Be sure to cover the pan and fry it to prevent oil from splashing on the skin.
5.? Take it out after 2 minutes, and the surface of the meat skin is as shown in the above picture. Fried pork belly with skin and let it cool.
6.? Put the pork belly skin up, cut it from the skin with a slicing knife and cut it into pieces with a width of 5 ~ 6mm.
7.? Mix braised soy sauce, oil consumption, light soy sauce, cooking wine, white sugar and Pixian bean paste (chopped in advance) and stir well. Add a few drops of white wine to make a sauce. The addition of Pixian bean paste can get rid of greasy and improve the taste level, but you can't put too much! !
8.? Pour the sauce into the dish, add the pork belly, and turn it constantly so that each side is covered with sauce. Then pour the sauce into the gap of the meat slices with a spoon, so that both sides of the meat slices are covered with the sauce and let stand for 20 minutes. This is for color and taste.
9. Wash the pre-soaked prunes (soaked for 30-60 minutes), drain the water, chop them up, put them in an oil pan, add ginger slices and a little salt, and stir fry for 1 minute. Put the pork belly skin down, cover it with fried dried plums, put it in a steamer, bring it to a boil, turn to low heat and steam for 90 minutes.
10.? After steaming, place it until it is not hot, cover it with a plate of the right size you like, press it tightly, then slowly take it out and turn it over.
