Spicy hot bean curd
Main ingredients: tofu, pork accessories: pepper, green pepper, dried pepper, garlic, onion, chicken essence, salt, thirteen spices, cooking wine, Laoganma.
Exercise:
1. Prepare tofu slices, shred peppers, mince onions and cut meat into pieces.
2. Chop the green pepper.
3. Prepare Laoganma and Chili.
4. Pour oil into the pot, add pepper, stir fry for a while, take out pepper, add garlic and meat, add soy sauce, stir fry, add Laoganma, add hot water and dried pepper.
5. Add tofu, add proper amount of salt, chicken essence, thirteen spices and cooking wine, cover the pot and start stewing.
6. If you think the tofu is rotten, put the miso out of the pot and put it on a plate, sprinkle with minced green pepper and chopped green onion!
Baked tofu
Ingredients: 500g of tofu Accessories: 3 tablespoons of soy sauce, honey 1 spoon, oyster sauce 1 spoon, half a spoonful of white vinegar, and proper amount of salt.
Exercise:
1. Cut tofu into mahjong tiles and fry them in oil pan.
2. Fry on one side and turn over until golden on both sides.
Mix 3.3 tablespoons of soy sauce, 1 tablespoon of honey, 1 tablespoon of oyster sauce, half a tablespoon of white vinegar and appropriate amount of salt into the sauce, and bring to a boil until bubbles are uniform.
4. Add the fried tofu and take it out when the soup is thick.
Braised tofu with three mushrooms
Ingredients: Tricholoma 100g, Lentinus edodes 100g, Flammulina velutipes 100g, tofu 1 block (or oily tofu) Accessories: 2 tablespoons of abalone juice and 2 tablespoons of oyster sauce.
Exercise:
1. Wash Lentinus edodes, Flammulina velutipes and Lentinus edodes, and cut tofu into pieces for later use.
2. Heat the oil in the pot to 70% heat, add tofu and fry over medium heat.
3. Fry until golden on both sides; If you use oily tofu, this step is omitted.
4. Pour out the excess oil, add three kinds of mushrooms and stir fry.
5. Stir-fry until the mushrooms are soft.
6. Add abalone juice, oyster sauce and a little water, and stew for 10 minutes.
Stuffed tofu
Ingredients: tofu 500g Accessories: a little chicken essence, minced meat 300g, half an egg, starch 1 teaspoon, a little garlic, 2 tablespoons soy sauce 1/2 tablespoons soy sauce, sugar 1 teaspoon, salt 1 teaspoon, cooking wine, water.
Exercise:
1. Soak tofu in light salt water for 15 minutes, take it out and drain it, and cut it into pieces of equal size.
Take out the tofu with a spoon, but don't dig it through.
3. 300 grams of minced meat, half an egg, 2 tablespoons of soy sauce 1/teaspoon of starch1teaspoon, a little minced garlic, a little tofu taken out, stir well, and put minced meat into hollowed tofu with a spoon.
4. Put cold oil in a hot pot, fry the tofu stuffing face down until golden, then turn it over and fry it until golden on both sides.
5. Mix 2 tablespoons of soy sauce, 2 tablespoons of soy sauce 1/2 tablespoons, sugar 1 tablespoon, salt 1 tablespoon, 2 tablespoons of cooking wine, half a bowl of water and a little chicken essence, and pour into the pot. After the water is boiled, turn to low heat for about 15 minutes to collect the juice.
Tips:
Soaking tofu in light salt water can remove the beany smell, make tofu stronger, and make south tofu less fragile when soaked.
Korean kimchi tofu pot
Ingredients: spicy cabbage 200g, tofu 100g, oily tofu 50g, Flammulina velutipes 100g, crab mushroom 100g, Lentinus edodes 1. Accessories: korean chili sauce, Korean soy sauce, onion, ginger. A little chicken essence and a little sesame oil.
Exercise:
1. Slice tofu, shred oily tofu, shred spicy cabbage and mince onion and ginger.
2. Remove the roots of Flammulina velutipes, Crab Mushrooms and Lentinus edodes and wash them.
Blanch the tofu in boiling water, then take it out and drain it.
4. Add a little oil to the pot, add ginger and chopped green onion and stir fry, then add spicy cabbage and stir fry.
5. Stir-fry the fragrance, pour in boiling water, add a spoonful of soy sauce and a spoonful of Chili sauce.
6. After boiling, pour into the casserole, add oil tofu, Flammulina velutipes and crab mushrooms, and cook for 3 minutes.
7. Slice the tofu neatly, add the mushrooms and simmer for 5 minutes.
8. Add chicken essence and sesame oil before serving and sprinkle with onions.
Baiyuxia tofu
Main ingredients: shrimp 100g, half a piece of tofu, green peppers 1 2, chopped green onion proper amount of auxiliary materials: salt12 tsp, pepper12 tsp, appropriate amount of water and starch1tsp.
Exercise:
1. Prepare materials; Cut tofu into small pieces and chop green peppers;
2. Blanch the shrimp and tofu separately;
3. Pour the oil in the pot and stir-fry the chopped green onion;
4. Stir-fry the cooked tofu and shrimp.
5. Add pepper, salt and water starch in turn;
6. Cook on high fire for 5 minutes.
Spicy hot bean curd
Ingredients: tender tofu 1 block Accessories: Zanthoxylum bungeanum 10g, Zanthoxylum bungeanum 15g, a spoonful of Pixian bean paste, shallots 10g, and a proper amount of lobster sauce (Chili oil).
Exercise:
1. Soak the tender tofu in salt water for about 10 minutes, and the tofu will not be so easily broken.
2. Prepare the ingredients and cut the shallots into chopped green onions for later use.
Cut tofu into small pieces
4. Heat the pan and add oil. When the oil is hot, turn to low heat, add pepper and pepper, fry them until they are cooked, take them out and throw them away, and add Pixian bean paste and Chili oil to stir fry.
5. Add tofu blocks, stir well, add water, cover the pot and stew for 2 minutes, sprinkle with chopped green onion and take out.
Yuanyang tofu
Ingredients: tofu, duck blood. Accessories: Pixian bean paste, soy sauce, onion, ginger, garlic and garlic seedlings.
Exercise:
1. Cut tofu and duck blood into small pieces, blanch with boiling water, remove and drain.
2. Put the oil in the pot. When the oil is hot, add onion, ginger and garlic and stir-fry until fragrant. Then add bean paste and stir fry, and add soy sauce.
3. Add water to boil.
4. Add tofu and duck blood and simmer for a while until soft and tender.
5. Drain the starch and thicken it.
6. Add garlic sprouts and cook.
Tips:
1. Tofu duck blood can be more tender, and it should not be crisp when fried.
The bean paste itself is salty, so I don't add much salt. If the taste is heavy, you can add some.
