1. Pour the purple potato powder, glutinous rice flour, fine sugar and aluminum-free baking powder into a large bowl, and mix them evenly with chopsticks first. The baking powder here can also be replaced by 1g baking soda.

After all the water is poured out, knead it into soft and smooth dough, cover it with plastic wrap and let it stand at room temperature for 20 minutes. The amount of water here is not absolute, because the water absorption rate of different brands of glutinous rice flour is different, so it should be increased or decreased according to the wet and dry state of dough.
After 3.20 minutes, take out the dough, divide it into 23 equal parts, and then cover it with plastic wrap to prevent it from drying.
4. Take a small dough, flatten it, and then put the bean paste filling. My bean paste stuffing weighs 8 grams. The bean paste here is best not to be too wet, which will affect the hollow state of hemp balls.
5. Then wrap it up and wrap it around. Because it's summer and the air is dry, if your dough is a little dry and difficult to operate, pat some water on your palm.
6. Put the kneaded meatballs into a white sesame bowl and cover them with white sesame seeds. You'd better press it by hand after wrapping it, so it will stick tighter.
7. Pour more than half of the pot oil in the pot, and the amount of oil is better than that of the green embryo.
