Step one:
Put the lotus seeds and Euryales into a bowl in advance and soak them in clear water for 2 hours. Then, peel the prepared fresh yam, rinse it, cut it into small pieces, put it in a big bowl and soak it in water to prevent oxidation. (Note: When peeling yam, you can put a bag on one end, and you can avoid the problem of itchy fingers by grasping the bag. )
Step two:
Clean the prepared lean meat, slice it, don't cut it when cutting, cut a whole piece, and then turn around and continue cutting in the opposite direction. Cutting like this can better remove blood. Originally, I made lean broth to buy a pig exhibition, but I didn't see the pig exhibition when I went to the market, so I bought this.
Step 3:
Prepare a clean pot, add some clear water, throw the cut lean meat into the pot, add two or three slices of ginger and a little cooking wine to remove the fishy smell, bring to a boil, blanch the raw meat once, remove the fishy blood from the lean meat, take it out in about two or three minutes, put it in clear water and wash it twice.
Step 4:
Prepare a saucepan, first add some water to it, and then put it into a clean saucepan. Then, pour fresh yam, lotus seeds soaked for two hours, Euryale ferox, lean meat and Poria into a stew pot, add 3 slices of ginger and dried tangerine peel 1 slice, and pour 3 to 5 bowls of warm water. My stew seems a little small. I can stew three bowls of soup at most. (Note: Do not add more than 8% of the stew. )
Step five:
Cover the saucepan first, then cover the saucepan and start stewing for 2 hours. After two hours, the stew was basically ready. Open the lid, add a little salt according to personal taste, and stir well with a spoon.
