1. Slice lettuce for later use; Beat the eggs in a bowl and put the corn flour and bread crumbs on a plate for later use.
2. This step is very important: remove the head and shell of the shrimp without removing the tail, then make a shallow 3-knife cut on the belly of the shrimp (it must be gentle, only cut off the shrimp tendons, this step is to prevent the shrimp from curling when heated), then pat the shrimp back twice with a knife to ensure that all the shrimp tendons are broken, and add salt, a little chicken essence and more black pepper to the processed shrimp for 5 minutes.
3. Take a prawn, dip it in a layer of raw flour evenly in turn, wrap it in a layer of egg liquid, and finally wrap it in bread crumbs (you can pinch the bread crumbs with a little hand pressure).
4. Shake off the extra crumbs on the shrimp, heat the oil in the pot, and then clamp it with chopsticks. After there are small bubbles in the middle, turn to low heat, gently add shrimp and fry until golden brown, remove and drain.
