The special thing about this recipe is that it uses the traditional "old flour fermentation" fermentation method. Ingredients

After 8-10 hours of fermentation, the dough is fermented. Add a small amount of baking soda to neutralize the acidity of the dough. Knead slightly and let rise again for 10 minutes.

Divide the risen dough into two, and use a rolling pin to roll each portion into a dough cake about 1cm thick and 30cm in diameter.

Make homemade old noodle fertilizer: After each fermentation, you can leave a small piece of dough in a fresh-keeping bag and place it in the refrigerator compartment, which is the "old noodle fertilizer" .
