Stewed bowls are one of the most distinctive areas in Northeast China.

Wedding banquets in rural areas of Northeast China are mostly influenced by Manchu habits. There is a saying that "six dishes and six bowls, or eight dishes and eight bowls", which is divided into four cold dishes, four large pieces, four stir-fried dishes and four stewed bowls.

These four stew bowls are the general name of stews, including stewed meatballs, stewed tofu, stewed three kinds, stewed scallops and stewed crab meat. But there must be a bowl of stew, which is what we are going to talk about today.

This authentic stew is a by-product of red and white meat cooked in a large pot. It is waste utilization. It's a soup made of elbows, pig intestines and some pig lungs. Because of this, the braised bowl is full of flavor and aroma.

In addition to this stew, there is also a vegetarian stew bowl. This vegetarian stew can be served with vegetarian dishes, and it is vegetarian, but it tastes just like a meat stew, except that there is no meat in the soup, but it tastes good.

Ingredients: potato, fat sausage, dried bean curd, fungus, carrot, garlic sprout, coriander, onion, ginger, garlic, salt, monosodium glutamate, white pepper and starch.

Exercise:

(1) Shred cooked fat sausage. Dried tofu is shredded. Auricularia auricula soaked in soft silk. Cut potatoes into long filaments and wash them twice in cold water to control moisture. Cut garlic and coriander into small pieces. Shred onion and ginger, and chop garlic.

(2) Pour a lot of oil into the pot, heat it to seven layers, sprinkle shredded potatoes into the pot, fry until golden and crisp, take it out and put it in the hedge for later use.

(3) Take another pot, add a little oil, heat it, add minced garlic and shredded ginger, stir-fry until fragrant, then add shredded onion, and stir-fry until it changes color.

(4) Pour the broth into the pot and bring it to a boil. Add dried bean curd, shredded pork intestines, shredded auricularia and shredded carrot, boil and stew for 3-5 minutes. If the broth is not salty, add salt.

(5) Mix half a small bowl of water starch, use enough starch, slowly pour it into the soup, and keep stirring until the stewed bowl soup becomes thick (but don't turn into paste or jelly ... after all, it is still soup).

(6) Add garlic sprouts, fried potato shreds, coriander and monosodium glutamate, and finally sprinkle with white pepper to taste.

If you make a vegetarian stew bowl, you change the broth into water, remove the onions and garlic, pour it into the pot and boil the water, then break an egg, stir it repeatedly and slowly pour it into the soup to form egg blossoms, and then add dried tofu and fresh mushrooms. Finally, don't put garlic seedlings, just put coriander. You made a vegetarian stew bowl. If you don't put eggs, you are vegetarian.
