Most people use mushrooms to stir-fry vegetables or make more soup. My favorite way to eat mushrooms is salt and pepper mushrooms. I used to order a mushroom with salt and pepper every time I went to a restaurant. Later, I learned to do it myself and often used it. Cook at home, wrap mushrooms in egg batter, fry until golden brown, and sprinkle with salt and pepper. Tear mushrooms into strips by hand, wash and drain for later use; Beat the eggs into a bowl and stir to disperse; Add proper amount of salt and thirteen spices, and stir well; Add one spoonful of starch and two spoonfuls of flour; Stir well, if this step feels thin, add flour as appropriate; Add the mushroom strips and spread the egg batter evenly; Heat the oil to 60% heat in a hot pot, then add the mushrooms and fry until cooked (minimize the heat); Stir-fry the mushroom strips until golden brown and take them out.
Mushrooms with salt and pepper must be crisp to taste, so after washing, you must squeeze out more water, dry it a little, not too much water, and it will be sticky after drying for a while, so stir-fry with less water. Pleurotus ostreatus can be crispy. The batter should not be too thin or too thick. If it's too thin, the batter won't stick. Fried Pleurotus ostreatus won't taste good. If it is too thick, it will not taste good when fried. The batter can be picked up with chopsticks and dripped slowly is almost enough. Control the oil temperature. First heat the oil with medium fire, add the Pleurotus ostreatus, and then fry it with high fire, which will be more brittle. Pleurotus ostreatus is easy to cook, so we must control the heat. Mix pepper and pepper according to your own taste. First, stir-fry the coke and grind it into powder, then stir-fry the salt and mix well. Don't tear the mushrooms too small. If it is too small, it will paste when fried, and it will also affect the appearance.
Take it out and put it on a plate, sprinkle with salt and pepper, and you can eat it. Eat while it's hot. Salt and pepper mushrooms are delicious to the skin and tender meat.
