Note: The roast chicken just braised out of the pot is very soft, and the tofu skin is loose and easily broken. After cooling, it will gradually tighten, and the mashed potatoes inside have solidified, making it easier to cut.
The difficulty of this dish is to control the hardness of mashed potatoes, because if the mashed potatoes are too thin, they may not form a finished product after cooling. Therefore, it is suggested that the water in mashed potatoes should be evaporated as much as possible when cooking. If you are still not satisfied, you can add a little starch to fix it.
