Salt bean is a common dish in northern Jiangsu, especially in Xinyi, Pizhou and Suining of Xuzhou.

Salt beans, commonly known as "old salt beans", also known as "stinky salt beans", "stinky beans" and "salted beans", are found in supermarkets now, and they are euphemistically called plum blossom beans. Every household, in winter leisure time, uses soybeans harvested in their own fields to make natto, then mixes it with Chili sauce, and sometimes adds dried radish to pickle spicy and tender dishes. "Looking at the red, eating incense, and not eating a meal are so greedy." This is the local people's praise for salt beans.

The most famous is the old song Yandou in Pizhou, Xuzhou, which was introduced in detail in the fifth episode of the first season of CCTV-9.
